AUTEC sushi robotics deployment at Belly Fish grows orders throughput

South Florida sushi restaurant chain Belly Fish has deployed AUTEC's ASM895A sushi robot and grown order volume.

Japan-based commercial sushi robot provider, AUTEC said that it’s seeing operators adopt robotics not to replace skill, but to protect it while improving speed and consistency.

The company highlighted one recent deployment that comes from Belly Fish, a fast-growing South Florida sushi brand. The restaurant adopted AUTEC’s ASM895A Maki Maker sushi robot and helped increase throughput, streamline operations and accelerate expansion plans.

Expedited sushi orders with robotics

Before implementing automation, AUTEC said that Belly Fish capped out at 50-55 orders/hour during peak periods and frequently paused delivery to keep up with dine-in service. After integrating AUTEC, while keeping the same 6-7 chefs on staff, the restaurant now:

  • Consistently hit 80+ orders/hour
  • Maintain a $65 average delivery ticket
  • Gain 30-40% more prep time during slower hours
  • Sustain prep times of 10–15 minutes (dine-in) and 40–45 minutes (delivery)
  • Preserve strict standards for rice texture, fish handling, and overall flavor

“At Belly Fish, the most important component of sushi is the rice. AUTEC has taken our consistency among team members to impeccable standards, even during rushes,” said Rodrigo Brazo, founder of Belly Fish. “No one is squeezing the rice, which helps speed up the line and ensures every roll comes out perfectly.”

Belly Fish said that these operational gains have positioned the restaurant to open new locations in Boca Raton (Summer 2026) and West Palm Beach shortly after, while also giving the founder the time to develop new concepts, including a wing-only delivery brand launching in early 2026.

“Integrating AUTEC has allowed me more freedom from being on the line to ensure consistency, letting me mentor my teams and focus on menu and future concept development,” Brazo added. “The robots help us serve more happy customers without ever compromising quality.”
